Didnt you know potatoes have eggs? laugh

Just jokin..saw this recipe on Foodnetwork from Paula Deen,,thought it would be nice to make for Easter with the kids.The more I think about it,,you can get more creative with them,,with decorations Chef

2 medium potatoes(2cups when mashed)
1 stick of butter
2-1pound boxes of confectioners sugar
1 1/2 teaspoon vanilla extract
2 cups melted chocolate

Boil and mashed potatoes,,then cool to room temp.Add butter to potatoes and mix into confectioners sugar and vanila extract..and chill in the fridge for 1 hour. Chef
The mixture will be the consistency of marzipan.
Divide with your hands into 16 pieces and roll into egg shapes.(You can make these bigger or smaller if you want)
Freeze them for 30 minutes then dip them into melted chocolate.Transfer them to a rack till the chocolate hardens . drool

Im thinking of making icing with confectioners sugar and add colors then drizzle it over the eggs ..like a Easter egg.Im sure this isnt for the dieters! LOL jocolor

This sounds fun! You could add a bit of PB to the potaote to make it take like PB eggs...maybe?

Im gonna make these Saturday night for Easter,will let you know the calorie count and how they turn out.
Has anyone else made these yet or before? If so let me know how yours did ..this recipe I think can be so versatile,,like instead of molding to egg shapes,,can me molded into pumpkins shapes for Thankgiving or Jackolanterns for Halloween,,Christmas ornaments....list can go on and on!
