these are a few of our inexpensive meals

quiche made with leftovers
"fried" rice
lentils and rice (prepared many different ways)
breakfast for supper
spaghetti
meatloaf made when ground beef or turkey goes on sale for 99 cents a pound
hamburger gravy on toast
pintos and corn bread

Todd made this casserole the other day with some of the whole chicken we had left (nearly 1/2 the chicken). It had cream of chicken soup ( $0.39/can), stuffing ($0.79/box), and the left over chicken.

It was GOOOOODDDD!

We are still working on the inexpensive meals. I really like the Fiesta Bake we made a couple of weeks ago, and there are more being planned for.

We make alot of meals that cost less than $2.00 for the whole dish. And many times, we get alot of leftovers.

My meals always seem to be costly. The cheapest we make is any type of pasta with sauce as we usually get the pasta for $.50 - $.90 a box and the sauce for $1.00 then I add garlic bread made from sandwich bread. Also chili and cornbread, 5 can soup and sandwiches, Baked chicken (on sale $.69 pound) with mashed potatoes, peas and gravy then use leftovers to make Chicken potpie./

Here's how I fed my Family of 6 (four kids ages 12 and under plus DH and me) for around $60 for the week....I shopped @ Save a Lot (and stopped @ the bread thrift store)...the prices are current (just a few months ago, right before Christmas....saving xtra for the Holiday's ....LOL Laughing )

$56 Menu (6 people)

Dinners

French Toast/ham/apples (apples sliced eaten fresh)

Pancakes/ ham/apples (apple slice leftovers sauteed with small amout sugar and butter- can be used as topping on pancakes or micro jelly for nice syrup)

Roast Chicken (we use 2)/ mashed potatoes/greenbeans (roast both chickens at same time for other dinners below-make double batch mashed potatoes for next meal- make broth from bones for next meal)

chicken with homemade noodles/corn/leftover mashed potatoes (make noodles with flour /eggs/dash salt- roll out /cut/cook in broth- reheat chicken & mashed potaotes. Save leftover noodles in broth for chicken soup meal)

Creamed chicken & veggies over homeade biscuits/carrot sticks (make biscuits-chop leftover chicken- corn and greenbeans left over from last 2 meals and add to basic cream sauce (2 tbls butter melted add 2 tbls flour add 1 c milk boil till thick- season to taste) add chicken & veggies serve over warm biscuits.

chicken soup/sandwhiches (grilled cheese or PB&J)take leftover noodles in broth- chop carrots and add any leftover creamed chicken and veggies to make a creamy chicken veggie soup -can make drop dumplings instead of sandwhiches if short on noodles (flour/egg/ salt- cook in boiling broth)

Spaghetti/meatballs/homemade garlic sticks (Butter bread , sprinkle with garlic, cut into 3 or 4 strips and broil)


Lunches

Any Leftovers (each meal usually has leftovers and kids are in school so we don't need too much)
Simple sandwhich (PB&J, Egg Salad, Grilled cheese (if you have any cheese), Chicken Salad if any chicken left over) serve with apples or carrots.

Breakfasts

eggs (scrambled/fried/poached)
Cereal
toast
juice
pancakes/french toast
fried apples/fritters


Snacks

crackers (w/cheese or peanutbutter)
popcorn
pretzels
apples-sliced raw or baked with sugar
carrot sticks
can make simple sugar cookies or snickerdoodles with what's on grocery list. Even apple pie/ cobbler if you have enough apples left!! - Be creative
a fun little snack my guys like is a jelly roll.....take a slice of bread....use a glass to cut a round from it....use a rolling pin to flatten bread (kinda like a tortillia) spread with jelly, roll up, dust with powdered sugar if you have any .

juice (Oj or apple)
milk
