Salmon Patties

Can of Salmon,saving the juice
dried diced onion
1/2 sleeve of saltines crushes s
1 egg
salt & pepper
dash of old bay seasoning

Take the bones out of the salmon saving the juice.Mix everything up using the salmon juice too.Put it in the fridge and let it sit at least one hour.You can as long as you need and it is fine.make into patties.I get 7 out of this.Fry them over medium heat in olive oil and butter until golden brown on each side.They don't take long on each side at all.

Tartar sauce-

1 cup mayo
1/4 cup of dill relish
2 T. chopped fresh onion
2 T. pickle juice


Mix everything together and serve cold.

Makes 1 1/3 cups.
