Anyone interested in meatless meals ..


I do at least one a week ..
a few of our favorites
Che- Cha

14 good-size Italian plum tomatoes
or 2 (14 ounce) cans plum tomatoes
2 handsful fresh basil leaves, chopped
1 clove garlic, minced
1/3 pound reduced fat mozzarella cheese, shredded
1 tablespoon olive oil
10 ounces fusilli (corkscrew macaroni) or your choice of noodle

Fill a pot with enough water to cover tomatoes. Bring to a boil. Add tomatoes to boiling water. Remove after about 10 seconds.
Mix the tomatoes, basil, garlic and cheese with the olive oil. Let stand in a covered bowl for at least 3 hours (or overnight refrigerated).
Cook fusilli. Drain. Add sauce to hot pasta. Mix well, and serve warm.

Rice & Beans

2 tablespoons olive oil
1/2 cup chopped onion
1/4 cup chopped green bell pepper
2 garlic cloves, minced
1/4 cup tomato sauce
1/4 teaspoon dried oregano
1 can (15.5 ounces) small red kidney beans, drained and rinsed
6 cups hot, cooked white rice

In a large saucepan, heat oil over medium heat. Add onion, bell pepper, and garlic. Cook 5 minutes, stirring often. Stir in 3/4 cup water, tomato sauce, and oregano. Bring to a boil and stir in beans. Reduce heat to low, cover, and simmer 15 minutes, stirring occasionally. Serve beans over rice.

These sound tasty. It's not very often I can get by doing a meatless. DH throws a fit!

Frank will go for once maybe twice a week I blessed he loves pinto beans so that helps

Meatless Lasagna

2 cups Ricotta
2 cups cottage cheese
2 eggs , beaten
2 tsp dried parsley
1 tsp dried basil
1 tsp dried oregano
1/2 salt
1/4 tsp black peper
4 cup spahetti sauce - no salt
12 whole - Wheat Lasgna noodles
( cooked or non cooked )
1 lb Mozzarella cheese shredded
/2 cup parmesan Cheese , grated

preheat oven 375 .
Make filing by combining ricotta cheese , cotttage cheese , eggs, parsley , basil, oregano, salt & pepper . Coat an oblong baking dish.. coat with cooking spray . layer one fourth sauce , one third noodles , half the filing , repeat unti the pan is filled sprinkle the Parmeasan cheese on top. Bake for 35 minutes covered and uncover the the last 10 minutes

I make this for church events and people never notice its mealess it so good ..
I have used chunky sauce I have added tomatoes eggplant, I have made this with tofu or used beef flaored TVP ..

I have tried 2 times in 12 years to make a meatless meal...believe me, it didn't go over well!!! LOL

wow I thought everyone did some sort of meatless ...

what about eggs as the protein .... or fish ....
