| One package soba noodles (I usually use regular linguine or spaghetti noodles) 1/3 cup soy sauce 1 Tbsp toasted sesame oil 1 Tbsp peanut butter 1 Tbsp water 1 tsp ginger, grated 1 small clove garlic, minced or pressed assortment of chopped vegetables (I use onion, celery, carrot, and peas, but broccoli and mushrooms and any other veggie you like will work fine). sesame seeds, chopped peanuts, cilantro and/or chopped green onion for garnish.
Directions Prepare noodles as directed on package. Drain noodles.
In a small bowl combine soy sauce, sesame oil, peanut butter, water, grated ginger and garlic.
In a large saute pan, saute vegetables of choice in oil until crisp-tender. Add noodles and sauce and toss thoroughly to coat. If the sauce seems a little too thick, add some pasta water a tablespoon at a time until it looks like it will blend nicely with the noodles and not glop.
Top generously with any or all of the garnish choices: chopped peanuts, cilantro, scallions, sesame seeds.
Eat hot, chilled, or at room temperature. _________________ Gayla
