I know I already asked for your pancake and syrup recipe but I would love to have your favorite frugal breakfast recipes.. Pancakes, waffles, muffins, french toast etc....... I am compiling recipes and making myself a book to keep in the kitchen as I am tired of searching everywhere for a recipe. I would also like to be able to print off copies to put away for the girls when they are older and move out. I figured I would start with breakfast foods as this is one of the easiest ways to save at the store is by making your own breakfast foods. Thanks so much!

Wake Up Shake

3/4 c skim milk
1/2 c strawberry yougart
1 ripe banana - frozen
1/4 c orange juice

Put all ingredients in blender Blend until smooth .

Oatmeal-Coconut Breakfast Bars

1 cup quick oats
1 1/2 cups apple juice
1 1/2 cups all-purpose flour
1/2 cup toasted wheat germ (IF DESIRED) great folic acid
3/4 cup shredded coconut, divided
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup packed brown sugar
1/2 cup applesauce
2 cups grated carrots
2 eggs, lightly beaten

Preheat oven to 350F. Grease a 13-by-9-inch baking pan.

In a microwave-safe bowl, combine oatmeal and apple juice. Cover and heat on high for 2 minutes. Let stand 10 minutes.

In a large bowl, combine flour, wheat germ, 1/2 cup coconut, baking powder, baking soda and slat. In a separate bowl, combine brown sugar, applesauce, carrots and eggs. Fold into flour mixture. Add oatmeal mixture and stir until just blended.

Spoon into baking dish. Sprinkle with remaining 1/4 cup coconut. Bake 50 to 60 minutes or until a toothpick inserted in center comes out clean. Cool and cut into squares. Yield: 16 squares

Early Morning Sticky Rolls

2 pkgs. refrigerator biscuits
1 (3 oz.) butterscotch instant pudding mix
1/2 c. margarine or butter
3/4 c. brown sugar
3/4 t. cinnamon
1/2 c. nuts

Spray a bundt pan with oil. Line with Biscuits. Melt butter, brown sugar and cinnamon. Spoon 1/2 mixture over 12 rolls. Sprinkle on 1/2 package pudding mix, sprinkle with nuts. Repeat layers. Cover place in the refrigerate overnight (maximum 8-10 hours). Bake at 350 degrees for 20-25 minutes. Add foil under and over rolls to prevent spills and excess browning. Check every 5 minutes.

BACON AND HARD-BOILED EGG CASSEROLE

2 large baking potatoes, unpeeled and cubed
¼ cup butter or margarine
¼ cup all-purpose flour
1 cup milk
1 cup half-and-half
4 cups (16 oz) shredded sharp Cheddar cheese
1 teaspoon dried Italian seasoning
½ teaspoon pepper
12 large hard-boiled eggs, sliced
1 pound bacon, cooked and coarsely crumbled
2 cups soft whole wheat breadcrumbs
3 tablespoons butter or margarine, melted
Garnish: fresh herb sprigs

Cook potatoes in boiling water to cover in a large saucepan 15 minutes or just until tender. Drain and cool.

Melt ¼ cup butter in a heavy saucepan over medium-low heat; add flour; and stir until smooth. Cook 1 minute, stirring constantly. Gradually add milk and half-and-half; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, Italian seasoning, and pepper; stirring constantly until cheese melts. Remove from heat.

Layer half each of egg slices, bacon, and cheese sauce in a lightly greased 13- x 9 inch baking dish. Top with potatoes. Top with remaining egg slices, bacon, and cheese sauce.

Combine breadcrumbs and 3 tablespoons melted butter; sprinkle over casserole. Cover and chill overnight, if desired.

Remove casserole from refrigerator. Let stand at room temperature 30 minutes. Bake, uncovered, at 350º for 30 minutes or until thoroughly heated. Garnish, if desired.

Stuffin' Egg Muffins

1 pkg (6oz) chicken stuffing mix
12 eggs
3 Tbsp real bacon bits
1/2 cup shredded cheese

Preheat oven to 400 degrees.

Prepare stuffing mix as directed on pkg, omitting stand time. Spray muffin cups with cooking spray. Press 1/4 cup stuffing mix firmly into bottom and up sides of cups, forming a 1/4 inch rim around the top.

Crack 1 egg into each cup, sprinkle with bacon bits and cheese.
Bake 20 minutes or until yolks are set. Let stand 5 minutes before serving.

I also like to scramble the eggs and pour them into the cups, scrambled sausage and a little cheese make them good too

Bacon and Egg Lasagna

This dish can be prepared the night before or early in the morning!

1 lb. bacon, cut into 1-inch pieces
1 c. chopped onions
1/3 c. flour
1/2 t. salt
1/4 t. pepper
4 c. milk
Vegetable oil or nonstick cooking spray
12 lasagna noodles, cooked and drained
12 hard-cooked eggs, sliced
2 c. (8 oz.) shredded Swiss cheese
1/3 c. grated Parmesan
2 T. fresh parsley, chopped

In large skillet, cook bacon until crisp; drain; reserve 1/3 c. drippings from pan. Set bacon aside; add onions to pan drippings and cook until tender; add flour, salt and pepper - stir to make a paste. Add milk; cook, stirring, until misture comes to a boil and is thickened.

Oil or spray 13 X 9-inch baking pan. Spoon a small amount of the sauce into the bottom of the pan.

Divide lasagna noodles, bacon, white sauce, eggs and Swiss cheese into thirds; layer in pan. Sprinkle with Parmesan. Cover and refrigerate overnight.

To bake - preheat oven to 350. Bake, covered, 25 minutes; uncover and bake 15 to 20 minutes longer or until heated through and top is lightly browned.

Breakfast Cornbread

2 Cups of Yellow Cornmeal
1 1/2 Cups Flour
2 Tsp. Baking Powder
1 Tsp. Baking Soda
2 Cups of Milk
1/4 Cup of Melted Butter
1 Lb. Breakfast Sausage
1 Large Onion, chopped fine
2 Cups of Grated Cheddar Cheese
1 Doz. Eggs

Using a 12-14" Dutch Oven, brown the sausage. Drain the fat, leaving approx. 3 Tablespoons. Mix cornmeal, flour, baking soda, baking powder, milk, butter & sausage in the dutch oven. While stirring, beat in the eggs, onions and peppers. Finally fold in the cheese. Cook at 350 degrees 30 min or until golden

Oatmeal

2 cups milk
1/4 cup brown sugar
1 tbsp melted butter
1/4 tsp salt
1/2 tsp cinnamon
1 cup rolled oats
1 cup chopped apple
1/2 cup raisins
1/2 cup chopped walnuts


Grease the inside of a slow cooker crockpot. Put ingredients into crockpot and mix with whisk. Cover. Just before going to bed, turn on the crockpot, at "low" speed. The cereal will be ready for morning. Serve with milk.


Baked Oatmeal

6 C quick cooking oats ( old-fashioned will work too)
1 C sugar
1 C packed brown sugar
2 tsp salt
1 tsp baking powder
2 C milk
1 C vegetable oil
4 eggs, slightly beaten

Combine all ingredients and pour into a greased (with a nonstick spray) 9x13x2 baking dish.
Bake uncovered at 350 degrees F for 35-45 minutes or until set. Serve with additional milk.

Bacon Oozy Bread

1 package bacon, chopped
1 cup maple syrup (I use homemade)
1 stick butter
2 cans (10 count) buttermilk biscuits

Preheat oven to 375°F.

Cook bacon until crisp. Drain, cool a bit, crumble, and reserve.

Place a small saucepot over medium heat and add the maple syrup and the butter -- do not bring up to a boil. Cook until butter is melted, then turn the heat off and reserve.

Butter or spray a 4"x9" loaf pan. Pour a couple tablespoons of the maple/butter sauce in the bottom. Layer 1 can of the biscuits in the bottom of the pan.

Sprinkle half of the reserved bacon onto of the biscuits and top with about a 1/2 cup of the butter syrup mixture.

Place the remaining biscuits on top, sprinkle the rest of the bacon over them and top with the remaining maple sauce.

Bake 25 to 30 minutes. Remove from oven and turn out onto serving platter. Serve hot.

Basic Granola

8 cups oatmeal, regular or quick-cooking, dry
1 cup oil
1 cup sweetening (syrup, honey, molasses, or sugar)

Measure oatmeal into a large bowl. In a small bowl, or 2 cup measuring cup, mix liquids together. Pour over oats and mix well, until all dry ingredients are moistened.

Spread mixture into a large baking pan (I used a cookie sheet, but 2, 9"x13", pans would work as well.) Bake at 350, about an hour, stirring every 15 minutes. Bake it until it's a rich, golden brown. Remove from oven and add any other ingredients you'd like (or leave it plain, if you prefer) Cool. Break up large chunks, if needed. Store in an airtight container.

Variations:

While you're pretty well stuck with making this with oats, because that's what makes it granola, the other ingredients are very flexible.

Oil:

You can replace all or half of the oil with melted butter, margarine, or peanut butter.
You can use half as much oil, but will need to increase the other wet ingredients by 1/2 cup.
For fat-free cereal, you could replace all of the oil with other ingredients, although the resulting cereal would be harder.

Sweetening:

Replace 1 cup of sweetening with pureed fruit, applesauce, jam, jelly, apple (or other fruit) butter, fruit juice, or maple syrup.
Bear in mind, brown or white sugar work as a liquid in recipes, since they melt when they come in contact with other liquids or with heat, so sugar can be substituted for part of the liquid.
You really only need to add 2 cups of liquid to this recipe. I used half greasy liquid (oil or melted butter), but the grease could be omitted entirely as long as you replace it with some other wet ingredient.

Extras:

Before baking:
stir in nuts, coconut, sunflower seeds, wheat germ, or anything that would benefit from baking.
add any spices you think would be good with your other ingredients
stir a couple of tablespoons of carob or cocoa powder into the mixture, after the wet ingredients have been added.

After baking:
stir in carob or chocolate chips, chopped dried fruit, gummies, or whatever floats your boat.
if you forgot to add spices before baking, or added them, but not enough, they can be added at any time during, or after, baking. They should, probably, be added while the granola is hot, but I won't swear to it.

Breakfast Take Alongs

2/3 cup butter or margerine, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1-1/2 cups oats (Quick or Old Fashioned, uncooked)
1 cup (4 ounces) shredded Cheddar chesse
1/2 cup Wheat Germ or chopped nuts
6 slices bacon, crisply cooked

Preparation Steps:

Preheat oven to 350° F.

Beat together butter, sugar, egg and vanilla until well blended.

Combine flour, baking soda and salt; mix well. Stir in oats, cheese, wheat germ and bacon. Add to butter mixture.

Drop by rounded teaspoonsful on to greased cookie sheet: bake 12 to 14 mins or until edges are golden brown. Cool 1 min on cookie sheet: removed to wire cooling rack. Store in losely covered container in refrigerator or at room temperature.

Recipe Yield: 3 dozen

Grape Nuts Cereal

3 1/2 cups graham flour (whole wheat will work, too)
1 cup brown sugar
2 cups sour milk
1 t. salt
1 t. soda

Mix flour, sugar, salt, and soda. Stir in sour milk. Bake 1 hour at 325 - 350 degs. Break into small pieces and continue baking until brown and crusty. When cool, grind in a food grinder. Store in airtight container.
