| Fish Cakes
1 cup cooked fish 2 cups mashed potatoes (can use instant – follow directions on package) 1 egg 2 tablespoons chopped fresh parsley – optional ¼ cup all purpose flour 2 tablespoons oil
1. Mash fish and potatoes together with the egg in a large bowl 2. With your hands, shape the fish mixture into cakes about 2 ½ inches in diameter and ½ inch thick 3. Spread flour on plate or piece of wax paper 4. Dip both sides of cakes in flour 5. Heath the oil in a frying pan and fish fry the cakes on both sides until golden brown : about 2-3 minutes on each side
Serves 2
I found this recipe in a cookbook for my Step-Sister's Christmas Recipe Book that I'm making. We have all the ingredients here at the house, so I am going to make it for dinner tonight for when my fiance gets home from work. I'll let you all know how it turns out.

| This looks like such a wonderful, tasty recipe! I was just wishing the other day that I had a new recipe for fish. I have had fish cakes before and potato cakes before, but never combined--sounds great! _________________ MARY |

| I didnt exactly follow the recipe, so they turned out more like the mashed potatoes.
I used instant Garlic & Herb Potatoes from Aldi's.
The dinner turned out good. I would cook it again. It was really easy, and had alot of flavor.
