| I have used this one from "More-With-Less Cookbook" by Doris Janzen Longacre for years and we love it.
Maple Syrup
Combine in saucepan: 1 3/4 C. white sugar 1/4 C. brown sugar 1 C. water Bring to boil, cover, and cook 1 minute. Cool slightly. (*I usually just turn off the electric burner at this point and let it sit several minutes, or even take it completely off the burner) Add: 1/2 tsp. vanilla 1/2 tsp. maple flavoring Cover saucepan for a few minutes as syrup cooks to melt down crystals; helps prevent syrup from crystallizing later in storage.
**I store it in the refrigerator. ***The last time that I made it I only had dark brown sugar in the house, but it worked great---made it dark and rich. _________________ MARY |

| Country White Gravy
3 Tbsp. poultry drippings (may use bacon or sausage also) 3/4 c. milk 3 Tbsp. flour 1 tsp. salt dash pepper 3/4 to 1 c. milk
Place drippings in medium skillet.
In a jar with a tight-fitting lid, or a small bowl, combine 3/4 c. milk, flour, salt, and pepper. Shake until well combined in jar or mix thoroughly in bowl. On medium heat, stir into drippings. Cook, stirring constantly until desired consistency.
It should be thick and bubbly. Add additional milk if necessary. Great over hot homemade biscuits.
Sawmill gravy
2 Tbsp butter 2 Tbsp Flour 1 C scalded milk Black pepper to taste other seasonings to taste
In a saucepan, melt butter. Whisk in flour and blend well. You are making a roux here so do not let it take on color. Stir in pepper Slowly stir in scalded milk and continue to cok and stir until thick and creamy
Red (Tomato) Gravy

2 tblsp. flour 2 tblsp. oil, bacon grease, or a mixture of oil and/or bacon grease with butter. 1/2 onion, finely diced 1 (8 oz.) can tomato sauce (or use stewed tomatoes) salt and pepper 1/2 cup milk or buttermilk
Pre-measure all ingredients and set them next to the stove top. Heat the oil or bacon grease in a heavy skillet over medium heat. Next make a roux. Lower the heat and stir in the 2 tblsp. flour until all the bits of flour have been mixed into the oil. Be very careful not to burn it. Continue to cook, stirring constantly, until the flour and oil form a thick fluffy paste, and stir constantly (10 minutes will do but 20 minutes makes a great roux). If it smells scorched, start over. Add the onions and stir for 2 more minutes.. Very slowly pour the tomato sauce (or stewed tomatoes) into the skillet. Keep stirring. Simmer for a few minutes until this mixture begins to thicken and boil. Simmer for about five minutes. Season with salt and pepper.
Take off the heat and pour in the milk or buttermilk, stirring constantly. If the gravy gets too thick, thin out by adding a little hot water. If you want it thicker, add some cornstarch mixed with water and cook it some more.
You can vary the gravy by adding garlic, thyme, oregano, bay leaves, ground red pepper, green onions, or curry powder _________________ Gayla

| My favorite pancake recipe is from "What to Cook When You Think There's Nothing in the House to Eat."
Makes about 8-12 4" pancakes.
1 cup all-purpose flour 2t baking powder 2T sugar Scant 1/2t salt 1 cup milk 1 egg 2T butter, margarine or veg oil
Combine dry ingredients with fork. Mix the milk, egg and butter. Pour liquid ingredients into dry. Mix about 50 stokes. Heat on griddle. Serve.
Variation: to make corn griddle cakes, stir in 1 to 1-1/3 cups defrosted frozen corn kernels with the wet ingredients.
Substitution: Instead of all white flour, use as much as 1/3 cup of whole wheat.
I usually do substitute with the whole wheat. I double or triple the recipe and freeze left-overs for an easy meal later. _________________ [url=http://www.TickerFactory.com/]

1 cup water 2 cups sugar 1/4 maple flavoring
stir together . bring to boil . Simmer 2 -3 minutes and cool. makes 1 pint .
Granny Maple syrup
1 cup brown sugar 1/4 Maple flavoring ( vanilla may be substituted) 1/2 cup water
stir together . bring to boil , simmer 2-3 minutes and cool. Pour into serving container makes 1 cup .
syrup
2 cus water 1 cup granulated sugar 2 cups dark corn syrup 1/4 tsp salt 1 tsp. maple flavoring
combine the first four ingredients in a sauce pan over meduim heat. Stir occasionally , until the mixture comes to a full boil . Boil for 7 minutes . Remove the syrup form the heat and let it cool for 15 minutes . Stir in the maple flavoring . wne completely cool, tranfer to glass container .. makes about a quart .
honey syrup
1/2 water 1 cup honey 1 tsp vanilla
heat the water over meduim heat . Add Honey just before boiling . stir well util completely mix do not boil . Remove from heat and stir in the vanilla . store in the refrigerator.. Honey can be used right from the jar .. but this syrup dilutes the overwheming sweetness of honey . _________________ Gayla
