My friend had a baby last week. The baby is now in ICU (a Viral infection) and is doing better. My friend was readmitted with severe migraine. She too is doing better. I think they both get to come home today. My question is...
What are some easy meal ideas I can make for her and her family so all she has to do is reheat it? It is her, her dh, a 3-year old and of course a newborn. I want to make several dishes so she doesnt have to worry about cooking.
So far, I am thinking muffins and banana bread. Now I need dinner ideas??

Go to our Crockpot Recipes section here. I've been making all kinds of these recipes. They're easy to make and easy to re-heat. You can add whatever other veggies you want, too. Homemade mac and cheese is easy, too, and the 3 yr old will probably like it. Cassaroles are a good choice, too.

I hope your friend and the baby are doing better. My prayers are with them.

Carrie I always sent a chicken dish creamy chicken and rice is good . and I take in a disposable dish I take some bread and a dessert . I send paper plates and napkins ..

Spaghetti, Baked Ziti, meatloaf, soups and stews and like sissy said the crockpot is great for this. Any casserole will work also

I was thinking lasagna, strogonoff, hamburgers, easy stuff to reheat and eat.

This was pretty easy to make (I made without the pepperoni):

Pizza Macaroni Style
By D. Strom
 
1  8oz box macaroni
1/4 cup water
1  8oz can tomato sauce
1  1/2 tsp. garlic salt
1  1/2 tsp. basil
1  lb. ground beef
1  1/4 tsp. oregano
1/2 cup onion
pepperoni
6 oz. mozzarella cheese

Cook meat and onion until brown. (I do this in the microwave in a covered dish for 5 minutes.) Drain.  Add spices and simmer. Cook macaroni and drain. Combine meat and macaroni in 9 X 13 Pyrex dish. Add water and 1/2 of tomato sauce.  Place cheese and pepperoni on mixture. Add rest of tomato sauce and bake at  375 for 20 minutes.


Fiesta casserole

 
4 cups cooked rice (I put a packet of taco seasoning in the rice)
2 cups cooked pinto beans-including a small amount of the liquid
2 bunches diced green onions
1 diced tomato
1 can of kernel corn
1 batch of biscuit or cornbread batter (or sprinkle some cheese on top)
 
Layer in order given, adding any seasonings you like. Bake at 350 for 25-35 minutes. Serve with salsa and sour cream.

Thanks everyone. They are both at home and doing well. I decided to make meatballs and lasagna roll-ups. I also made a loaf of friendship bread and some muffins.
