4 cups sifted flour

2 cups sugar

4 teaspoons baking powder

1 /2 teaspoon salt

1 cup butter

4 eggs, separated

1 cup milk

1/4 cup melted butter

2 teaspoons ground cinnamon

Preheat oven to 375. Sift the first four ingredients together. Cut in the butter with two knives until pieces are the size of rice kernels. Measure 1 cup of the crumbs and set aside for topping. Beat the egg yolks until thick and lemon colored and add with milk to remaining crumb mixture. Stir just until dry ingredients are moistened. Beat the egg whites uintil rounded peaks are formed. Fold into egg-yolk mixture until blended. Turn batter into 2 well-greased (bottoms only) 9 X 9 X 2 in pans and sprinkle top of each with one half of the reserved crumbs. Bake at 375 for 20 to 25 minutes. After baking, sprinkle top of each cake with one half of a butter-cinnamon mixture. Makes two 9 inch square cakes.
