Mac 'n Cheese (5 Pts)


2 1/2 cups 1% low-fat milk
1/4 cup all-purpose flour
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1 1/2 cups cheddar cheese ; lowfat shredded
2 ounces nonfat cream cheese
3 tablespoon parmesan cheese
6 ounces macaroni ; cooked

**TOPPING**
1/4 cup bread crumbs
1 tablespoon parmesan cheese


In a medium saucepan, combine the milk and flour until smooth. Cook overmedium - high heat until mixture is bubbly and thickened, about 7 or 8minutes.

Stir in dry mustard, salt, paprika, pepper, all cheeses, and onions.Continue to cooik utnil cheeses are completely melted.

Combine cheese sauce with cooked macaroni. Transfer to a large casseroledish that has been sprayed with non-stick spray.

Mix bread crumbs and parmesan cheese. Sprinkle over macaroni. Bake at350 degrees, uncovered for 30 minutes. Serve immediately.

PostSubject: Lobster Mac & Cheese   Wed 04 Jul 2007, 7:59 pm

Recently David has seen 2 ads for Lobster Mac & Cheese. He has his lobster license so this might be a fun dish to try with the culls (a lobster missing both claws which doesn't sell for full price) Do you think I'd just steam the lobster and add to Mac and Cheese before baking?
