Chocolate Chip Pancakes in a Jar
Jar Yield: 4 servings
(4 pancakes each)

1 qt wide mouth canning jar
3 cups all purpose flour
1 cup chocolate chips
3 tbsp sugar
2 tbsp baking powder
1 1/4 tsp salt

In large bowl, combine all ingredients and mix well. Transfer to jar. Secure lid and decorate as desired.

For each serving , in addition to 1 cup jar mix you will need to add:
1 egg, slightly beaten
3/4 cup cold milk
2 tbsp veg oil

Lightly coat pan with cooking spray. Place 1 cup mix, egg, milk and oil in a bowl and mix gently with a wooden spoon or whisk til well blended but slightly lumpy. Pour 1/3 cup batter onto griddle and cook til edges are dry and browned. Flip and cook another 30 seconds. Serve hot with butter and syrup.


* NOTE: I keep this mixed up in a jar with the instructions attached in my pantry. I used the batter 3 times with each time making 6 pancakes. I then flash freeze the finished product and store them in a ziploc bag in the freezer. The kids love getting them out for breakfast and popping them in the microwave in the morning (one dd puts hers in the toaster). Really good without syrup and with a little powdered sugar sprinkled on top.
