| Sweet, Moist Banana Bread
2 C Flour 1 tsp Baking Soda 1/4 tsp Salt 1/2 C Butter (at room temperature) 3/4 C Brown Sugar, firmly packed 2 Eggs, beaten 2 1/3 C Mashed, overripe Bananas (7 to 8 bananas) 1/4 C Honey
Preheat oven to 350 F. Lightly grease a 9 x 5 inch loaf pan*. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter, brown sugar and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just enough to blend well. Pour batter into prepared loaf pan. Bake in preheated oven for 60-65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto wire rack.
*I used a small Pyrex cake pan (7 1/2 x 11) instead and the cooking time dropped to approximately 35 minutes.
This is probably my favorite banana bread recipe because of the strong flavor of bananas and because it's so moist. _________________ Gayla

| Does anyone know why all (pretty much 99%!!) of all the "whole wheat" bread recipes I have seen ,all consist of not only whole wheat flour, but also include white (well, I'm presuming "white" anyway) flour (the recipes say all- purpose flour or bread flour), along with the whole wheat flour??
I'm curious! Does it just have to do with "taste"? or is it something more technical? I'd like to just consume "whole wheat" bread, & not have any white flour, but I don't know so many recipes include white flour in their whole wheat recipes!! (sorry if I'm being redundant!) _________________

| no, Gayla, unfortunately I don't have a bread machine...is that what you use, a bread machine? I may try asking my in-laws though...I know they used to have one, & if they still have it, I'm sure they will gladly give it to me. I KNOW they don't make bread anymore, haven't in years...I will ask them.
However, I just finished reading a book called "Lifestyle 2000" (it was printed in 1993) and I got it from Paperbackswap.com...mostly it totes a vegetarian lifestyle, but has lots of nice tips in it for healthy eating, and a healthy lifestyle. It has some recipes in the back & one was for a 100% whole wheat bread! Here it is:
Ingredients: 2 pkgs. active dry yeast 1/4 c. warm water 2 1/2 c. hot water 1/4 to 1/2 c. honey 1 T. salt 1/4 c. oil 1 c. wheat germ 7 c. whole wheat flour ------------------------------------------------------------ SOFTEN active dry yeast in 1/4 c. warm water. COMBINE hot water, honey, salt, & oil in another bowl. STIR in wheat germ. ADD 4 c. whole what flour to make a moderately soft dough. ADD softened yeast mixture to dough. ADD remaining flour. TURN OUT on a lightly floured surface. KNEAD until smooth & satiny. SHAPE dough into a ball. PLACE in a lightly greased bowl. COVER & let rise in a warm place until double (about 1 & 1/2 hours.). PUNCH down. CUT into 2 portions (about 1 1/4 to 1 1/2 lbs. each.). SHAPE each into smooth ball. SHAPE into loaves. LET RISE until double (about 1 hour.). BAKE 30-35 minutes at 350 degrees F. _________________

| Bread machine 100% whole wheat bread
1 cup water
2 1/2 Wheat bread flour
1 1/4 Tbsp. dry milk
1 tsp. salt
1 1/2 Tbsp butter 1 1/4 Tbsp honey
1Tbsp Gluten
2 Tbsp Molasses
1 1/2 yeast ( fast rise ) or 2 tsp Yeast ( active dry )
The trick to making 100% whole whear bread is the extra knead this give the yeast and gluten to creat a lighter loaf. if your bread machine doesnt have a whole wheat cycle . stop the machine after the first knead and start the machine again . I you dont do this you wil have a very dense loaf..
hope this helps cheapy _________________ Gayla
