13 cups bread flour, I use 1/2 white and 1/2 wheat
2 tablespoons of salt
1/2 cup of instant nonfat dry milk
1/2 cup sugar

Mix together and keep in a cool dry place, you should use this up
within 2 months if you are using wheat flour, 6 months if you are
using white flour

Large Loaf

2 tsp active dry yeast
3 1/3 cup of mix above
1 1/2 tbsp of butter or vegetable oil
1 1/4 warm water

Mix and bake on Light setting..

Variations:

Cinnamon Raisin - To basic recipe add 1/2 cup raisins and
1 1/2 teaspoons ground cinnamon. Glaze with Powdered sugar
glaze while still warm.

French Bread - eliminate the butter, I use the knead only setting
and bake this in the oven so I have a nice long loaf

Sweet Bread - Add 1 TBSP of sugar with dry ingredients. Break
egg into measuring cup, fill cup with water to amount called for in
recipe.

Herb Bread - add 1 1/2 teaspoons dry herbs of your choice
Rosemary, basil, dill, etc.

I was making bread in the bread machine, but could not during the summer due to the heat. I need to start it up again, because of the low-sodium diet, and this would make it quick and easy. I have two used machines and one only makes small loaves. The other I have not tried out yet and I hope that it makes large loaves. Thank you Gayla.
