Chinese fried rice

1 1/3 cups water
3/4 cup rice
3 tablespoons peanut oil
4 green onions with tops, chopped
1/4 teaspoon salt
2 carrots, finely chopped
1/2 cup finely chopped green bell pepper
1/2 cup frozen peas
1 egg
2 tablespoons reduced-sodium soy sauce
1 tablespoon sesame oil
1/4 cup chopped parsley

In a saucepan, bring the water and rice to a boil, stirring frequently. Reduce heat to low, cover and simmer until the rice is tender and has absorbed all the liquid, about 20 minutes.

In a large heavy skillet or wok, heat the peanut oil over medium-high heat. Add the cooked rice and saute until lightly golden. Add the green onions, salt, carrots, peppers and peas. Stir-fry until the vegetables are tender-crisp, about 5 minutes.

Hollow out a circle in the center of the skillet by pushing the vegetables and rice to the sides. Break the egg into the hollow and cook, lightly scrambling the egg as it cooks. Stir the scrambled egg into the rice mixture. Sprinkle with soy sauce, sesame oil and chopped parsley. Serve immediately

Breakfast burrito

1/2 cup chopped tomato
2 tablespoons chopped onion
1/4 cup canned corn
1/4 cup egg substitute
1 flour tortilla,
6 inches in diameter
2 tablespoons salsa

In a small skillet, add the chopped tomato, onion and corn. Cook over medium heat until the vegetables are soft and moisture is evaporated. Add the egg substitute and scramble with the vegetables until cooked through, about 3 minutes.

To serve, spread the egg mixture in the center of the tortilla and top with salsa. Fold in both sides of the tortilla up over the filling, then roll to close. Serve immediately.

Fresh Veggie Bagel Sandwich

1 bagel, sliced in half
1 tablespoon coarse-grain brown mustard
1 leaf romaine lettuce
2 (1/4 inch thick) rings green bell pepper
4 slices cucumber
2 slices tomato
salt and freshly ground black pepper to taste
2 slices red onion
1/2 cup alfalfa sprouts

Spread mustard onto the cut sides of the bagel. Layer the lettuce, green pepper, cucumber, and tomato on one half. Season the tomato with salt and pepper. Top with onion and alfalfa sprouts, then cover with the other half of the bagel.

Bean and Cornbread Casserole

1 tablespoon vegetable oil
1 medium onion, chopped
1/2 cup chopped green pepper
2 cloves garlic, minced
3 cups cooked rice
2 (14 1/2-ounce) cans stewed tomatoes
1 (19-ounce) can kidney beans
1/2 cup fresh cilantro, chopped
1 tablespoon chili powder, divided
1 teaspoon salt
1/2 teaspoon ground black pepper
Vegetable cooking spray
1 (7-ounce) package cornbread mix
1 (8 1/2-ounce) can cream-style corn
Green pepper strips for garnish

Heat oil in large skillet over medium-high heat until hot. Add onion, green pepper and garlic; cook, stirring constantly, until tender. Stir in rice, tomatoes, beans, cilantro, 2 teaspoons chili powder, salt and pepper. Cook 5 minutes or until heated through; pour into 13x9x2-inch baking pan coated with cooking spray; set aside.

Mix cornbread mix according to package directions, add corn to mixture. Pour over top of casserole. Sprinkle with remaining 1 teaspoon chili powder.

Bake at 400 degrees F. 30 to 35 minutes or until cornbread is golden brown.

Cut into 8 squares. Garnish with green pepper strips, if desired.

Vegetable Lasagna

9 lasagna strips

4 C. mixed fresh vegetable (cauliflower florets, thinly sliced carrots, small strips green pepper, etc.)

1/4 pkg. onion soup (dry)

1 (18 oz.) jar (or homemade) meatless spaghetti sauce

12 oz. low-fat, part skim milk Ricotta cheese

Preheat oven to 400° F. Boil lasagna strips less than
full cooking time on package.

Mix vegetables with soup. In 9 x 13-inch glass baking dish, spread small amount of sauce. Put 3 strips of lasagna noodles on top. Spread 1/3 of the cheese on the lasagna and pour 1/2 of the vegetables on top. Pour more sauce on top of the vegetables. Repeat lasagna, Ricotta, vegetables and sauce. End with lasagna. Pour rest of sauce and cheese on top.

Bake for 1 1/2 hours or until top browns.

Can be made ahead, covered with foil and left in warm oven for several hours before serving.

Meatless Sloppy Joes

2 teaspoons olive oil

1 red onion, coarsely chopped

2 carrots, halved lengthwise and thinly sliced

1 zucchini, finely diced

1 teaspoon paprika

1 teaspoon dried basil

1 teaspoon chili powder

2 cloves garlic, minced

1 cup canned no-salt-added tomato puree

1/2 cup barbecue sauce

1 15-ounce can red kidney beans, rinsed and drained

1 tablespoon cider vinegar

4 hamburger rolls


In a large nonstick skillet over medium heat, heat the oil until hot. Add the onion and carrots and cook until the onion is softened, about 5 minutes. Add the zucchini, paprika, basil, chili powder and garlic and cook, stirring occasionally, until the carrots are crisp-tender, about 6 minutes.

Stir the tomato puree, barbecue sauce, beans and vinegar into the pan. Reduce the heat to a simmer and cook until the mixture is slightly thickened and the vegetables are crisp-tender, about 5 minutes.

Open the hamburger rolls and divide among 4 plates. Spoon the vegetable mixture onto the hamburger rolls and serve.

Tamale Pie

Filling:
3 cups cooked Dark or Light Red Kidney Beans, drained, rinsed, and mashed
1/2 cup onion, chopped
2 cloves garlic, minced
1 cup green bell pepper, chopped
1 tablespoon corn oil
2 tablespoons tomato paste
1 heaping teaspoon chili powder
1/2 cup water
1/4 cup green olives, sliced
3 tablespoons fresh parsley, minced
1/4 teaspoon black pepper

Crust:
1 cup yellow cornmeal
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 large egg, lightly beaten
1/2 cup 2% milk
2 tablespoons olive oil
2 tablespoons green chilies, chopped

Topping;
1/2 cup sharp lowfat Cheddar cheese, grated

In a large skillet, sauté onions, garlic, and green pepper in oil. Stir in tomato paste and chili powder. Then add water, beans, olives, parsley, and black pepper. Simmer mixture, stirring, until heated through.

Spread bean mixture evenly in a greased 8-inch baking dish or shallow casserole.

In a medium bowl, combine cornmeal, flour, salt, and baking powder. Add egg, milk, .oil, and green chilies Stir mixture until ingredients are moist.

Spread batter over bean mixture and top with cheese.

Bake, uncovered, at 400°F for 20 minutes or until crust is golden brown.

I make this alot ... I have used Pinto bean freash cooked in place of the kidney beans,,, its a family favorite.

Shepherd's Pie

4 large or 6 medium potatoes
1 tablespoon margarine
1/2 cup low-fat milk, rice milk, or soymilk
1 tablespoon vegetable oil
1 medium onion, finely chopped
2 medium carrots, peeled and sliced
1/2 medium head cauliflower, finely chopped
1 cup frozen peas, thawed
1 cup cooked fresh or frozen corn kernels, thawed
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill, optional
Seasoned salt and freshly ground pepper to taste
Wheat germ

Preheat the oven to 400*F.

Peel and dice the potatoes. Place in a saucepan with enough water to cover. Bring to a simmer, then cover and simmer until tender, about 20 minutes. Drain and transfer to a small mixing bowl.

Stir the margarine into the potatoes until melted, then add the milk and mash until fluffy.
Set aside until needed.

While the potatoes are cooking, heat the oil in a skillet. Add the onion and carrots and saute over medium heat until the onion is golden. Add the cauliflower and 1/4 cup water. Cover and cook until the cauliflower is just tender, about 5 minutes.
Add the peas, corn kernels, parsley, and optional dill. Cook until the mixture is well heated through, then stir in 1/2 cup of the mashed potatoes. Season with seasoned salt and pepper.
Lightly oil a shallow 2-quart round or rectangular casserole dish. Sprinkle the bottom with a generous layer of wheat germ, then pour in the vegetable mixture and pat in evenly. Spread the mashed potatoes over the top and pat down lightly.
Bake for 30 to 35 minutes, or until the potatoes begin to turn golden and slightly crusty. Let stand for 5 minutes, then cut into squares or wedges to serve.
Makes 6 servings.

VARIATIONS:
To make this dish even more substantial, add 8 ounces of well-drained, finely diced tofu (or baked tofu) or 1 cup cooked or canned beans of your choice.
Other vegetables can be substituted for the ones listed above. Try broccoli instead of cauliflower; zucchini or green beans in place of the corn and/or peas; and a half cup or so of sliced mushrooms is a welcome addition if everyone present likes them.

I really enjoy meatless recipes. Vegetable lasagna is our favorite kind and this recipe is different--have to try it out!

Baked ziti with vegetables

1 1/3 cup uncooked ziti
2 cans (14 ounces) tomatoes, drained (reserve 1 cup of the juice)
1 cup sliced carrots
2 cup chopped broccoli
1 cup diced green bell pepper
1/2 cup sliced mushrooms
4 garlic cloves, minced
2 teaspoons dried basil
2 teaspoons dried oregano
1 teaspoon ground black pepper
1 cup mozzarella cheese
1 cup Parmesan cheese

Preheat the oven to 375 F. Lightly coat a baking dish with cooking spray.

Fill a large pot 3/4 full with water and bring to a boil. Add the pasta and cook until tender, 10 to 12 minutes, or according to the package directions. Drain the pasta thoroughly.

In a nonstick frying pan over medium heat, add the reserved juice from the canned tomatoes. Stir in the carrots, broccoli and green pepper. Saute the vegetables until tender, about 5 minutes. Add the mushrooms and garlic and cook for another 5 minutes.

Add the tomatoes, basil, oregano and black pepper to the vegetable mixture. Cook over low heat for 3 to 5 minutes.
Transfer the cooked vegetables to a large bowl. Add the cooked pasta and mozzarella cheese. Toss gently to mix. Spoon the mixture into the prepared baking dish. Sprinkle with the Parmesan cheese. Cover with aluminum foil and bake until the mixture is hot and bubbly, about 30-45 minutes. Remove the aluminum foil after 15 minutes.

Sweet peppers stuffed with scalloped corn

4 red or green bell peppers
1 tablespoon olive oil
1/2 onion, chopped
1 green bell pepper, chopped
2 1/2 cups frozen corn
1/2 teaspoon salt
1/8 teaspoon chili powder
2 tablespoons chopped fresh cilantro or parsley
3 egg whites
1/2 cup milk
1/2 cup water

Preheat the oven to 350 F. Lightly coat a baking dish with cooking spray.

Cut the tops off the bell peppers and remove the seeds. Place in the prepared baking dish and set aside.

In a medium skillet, heat the olive oil over medium heat. Add the onion, chopped green pepper and corn. Saute until the vegetables are tender, about 5 minutes. Stir in the salt, chili powder, and cilantro or parsley. Reduce heat to low.

In a small bowl, whisk together the egg whites and milk. Add to the corn mixture and stir. Increase heat and continue stirring until egg whites begin to set, about 5 minutes. The mixture should be moist, not dry.

Spoon 1/4 of the corn mixture into each pepper. Add the water to the bottom of the baking dish. Cover the peppers loosely with aluminum foil. Bake until the peppers are tender, about 15 minutes.
