Soft tacos with southwestern vegetables

1 tablespoon olive oil
1 medium red onion, chopped
1 cup diced yellow summer squash
1 cup diced green zucchini
3 large garlic cloves, minced
4 medium tomatoes, seeded and chopped
1 jalapeno chili, seeded and chopped
1 cup fresh corn kernels (cut from about 2 ears of corn) or 1 cup frozen corn
1 cup canned pinto or black beans, rinsed and drained
1/2 cup chopped fresh cilantro
8 corn tortillas
1/2 cup salsa

In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until soft. Add the summer squash and zucchini, and continue cooking until tender, about 5 minutes. Stir in the garlic, tomatoes, jalapeno, corn kernels and beans. Cook until the vegetables are tender-crisp, about 5 minutes. Add the cilantro and remove from the heat.

Heat a dry, large frying pan (without a nonstick surface) over medium heat. Add 1 tortilla to the hot pan and heat until softened, about 20 seconds per side. Repeat with the remaining tortillas.

Spread an equal amount of the vegetable mixture on each tortilla. Top each with 2 tablespoons of the salsa.

Broccoli cheddar bake

4 cups chopped fresh broccoli
1/2 cup finely chopped onion
2 tablespoons water
1 1/2 cup egg substitute
1 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon ground black pepper

Preheat the oven to 350 F. Lightly coat a baking dish with cooking spray.

In a nonstick skillet, combine the broccoli, onion and water. Saute over medium-high heat until the vegetables are tender, about 5 to 8 minutes. Keep adding water to prevent the vegetables from drying out, but use as little water as possible. Drain and set aside when the broccoli is done.

In a bowl, combine the egg substitute, milk and 3/4 cup cheese. Add in the broccoli mixture and pepper. Stir to mix well.
Transfer the mixture into the prepared baking dish. Set the baking dish into a large pan filled with about 1 inch of water.

Bake uncovered until a knife inserted in the center comes out clean, about 45 minutes. Remove from the oven and top with the remaining 1/4 cup shredded cheese. Let stand about 10 minutes before serving.

ZUCHCHINI GARDEN CHOWDER

2 med. Zucchini, chopped (I used large ones)
1 med. Onion, chopped
2 TBS. minced parsley
1 tsp. dried basil
1/3 c. butter
1/3 c. flour
1 tsp. salt
1/4 tsp. pepper
3 c. water
3 cubes chicken bouillon
1 tsp. lemon juice
1 (15. oz) diced tomatoes undrained
1 (12 oz.) can evaporated milk
10 oz. pkg. corn, frozen
1/4 c. grated parmesan cheese
2 c. shredded cheddar cheese

In dutch oven or soup kettle, saute the zucchini, onion, parsley and basil in butter tjill vegetables are tender. Stir in flour, salt and pepper. Gradually stir in the water. Add the bouillon and lemon juice; mix well. Bring to a boil; cook and stir for 2 minutes or until thickened. Add tomatoes, milk and corn; bring to boil. Reduce heat; cover and simmer for 5 minutes or until corn is tender. Just before servinc, add cheeses; stir unitl melted. Yeilds 8 to 10 servings (about 2 1/2 quarts)

Savory Salisbury Patties

1 cup finely ground pecans or walnuts
1 cup cold water
1 T. soy sauce
1 cup crumbled Tofu
1/2 t. onion salt
1 and 1/2 cup rolled oats
1/4 t salt or to taste

GRAVY
1 can cream of mushroom soup

combine ingredients and form into patties. fry using cooking spray, browning on both sides. place in casserole dish and top with gravy. Heat until bubbly at 350 degrees for about 30 minutes

TAMALE PIE

1 pound vegeburger or beef-style tvp (textured vegetable protien)
1 cup chopped onion
1 green pepper, chopped
1 can (15 oz.) tomato sauce
1 can (28 oz. ) tomatoes, cut up
1 can (17 oz) whole kernel corn, drained
1/2 cup pitted ripe olives
1 clove garlic minced
1 tablespoon sugar
1/2 tsp. salt
2 tsp. chili powder
1 cup grated cheddar cheese or cheddar style soy cheese
(reserve an additional 1/2 cup of grated cheese for topping)

Crust
3/4 cup yellow corn meal
1/2 tsp. salt
2 cups cold water
1/2 tsp. chili powder
1 tablespoon butter

To make filling, brown vege burger onion and green pepper, drain. Add the remaining ingredients except cheese. Bring to boil, simmer, uncovered, for 20 min. or until thickened. add cheese, stir until melted. set aside.


To make crust: combine cornmeal, salt, water, and chili powder in a sauce pan. Cook on med/high stirring constantly, until thick. add margerine, mix well. spread half of remaining crust mixture over bottom of 12x18x2 baking dish. add filling, spoon on rest of remaning crust. bake at 375 for 45 min. top with 1/2 cup grated cheese if desired

I love meatless meals! Vegetable lasagna is my favorite kind and this recipe sound sounds yummy so I am going to have to try that one first.Hungry

I make with tvp or gound beef I used chicken and I think turkey once or twice....
