| Cheesy Hash Browns 1/2 cup fat-free sour cream 1/3 cup condensed reduced fat reduced sodium cream of chicken soup 2 1/2 cups hash browns, frozen 1 cup reduced fat cheddar cheese, divided 1 tablespoon butter (I used margarine) salt and pepper to taste
In a large bowl, combine sour cream and soup. Stir in potatoes, 1/2 cup cheese, butter, salt and pepper. Pour into 1 quart baking dish coated with nonstick cooking spray. Sprinkle with remaining cheese.
Cover and bake at 350 for 30 minutes. Uncover, bake 5-10 minutes or until bubbly and heated through.
8 servings at 2 points a piece.
Meatloaf 5 servings at 5 points per serving
1 pound lean ground turkey 1/2 cup regular oats, dry 1/4 cup ketcup 1-1 1/2 tablespoons brown mustard (We actually use horseradish mustard if we have it) To taste: dried dill, black pepper, celery salt, seasoning salt, and onion powder. Set aside additional ketchup, up to 2 tablespoons.
Combine all ingredients and mix well. Shape into log shape with slightly dome shape. Glaze with additional ketchup. Bake at 350 to internal temperature of 165 for 25 minutes.
Sweet and Sour Chicken
1 pound skinless boneless chicken breasts 2 tablespoons cornstarch 1/3 cup water 1/4 cup rice vinegar 1/4 cup sugar 3 tablespoons ketchup 2 tablespoons reduced-sodium soy sauce 1 tablespoon canola oil 1 teaspoon ground ginger 1 tablespoon minced garlic 8 ounces pineapple chunks in juice, drained
1. Combine chicken with 1 tablespoon of cornstarch in bowl, toss well to coat and set aside. Combine the remaining 1 tablespoon cornstarch, water, vinegar, sugar, ketchup, ginger, and soy sauce and set aside. 2. Heat a large nonstick skillet over medium high heat until a drop of water sizzles. Swirl in oil and add chicken. Stir fry until almost cooked. Add the garlic and stir fry until fragrant. Add pineapple and stir fry until crisp-tender. Add the vinegar mixture and cook, stirring constantly, until the mixture boils and thickens and the chicken is just cooked through.
NOTES : 6 points
Used Splenda once somewhat succesfully, the sauce had the same great taste but wasn't very thick.
Tangy Lemonade Pie Very easy to make, very tasty. With the crust the recipe is 6 points a slice, without is 2 points for the yummy filling.
1 package sugar free lemon gelatin 8 ounces fat free cream cheese 1 3/4 teaspoons sugar free lemonade drink mix( I used Crystal Light) 6 tableapoons fat free whipped topping 1 reduced fat graham cracker crust.
Prepare gelatin according to package instructions. Chill until almost set. Transfer to blender, add cream cheese and lemonade mix, cover and blend until smooth. Refrigerate overnight. Serve with whipped topping.
Chicken Bruschetta Bake 1 can (14.5 oz) diced tomatoes undrained 2 cloves minced garlic 1 pkg (6 oz) Stove Top Stuffing for chicken 1/2 cup water 1-1/2 lb (4) chicken breasts 1 tsp dried basil leaves 1 cup part skim mozzarella cheese
Preheat oven to 400 degrees F. Place tomatoes with liquid in bowl. Add garlic, stuffing mix and water; stir just until stuffing mix is moistened. Set aside. Place chicken in 13x9 baking dish; sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through.

Honey Mustard Chicken Fingers 1/4 cup honey mustard 1 pound boneless, skinless chicken breasts 2/3 cup bread crumbs (Can use italian seasoned or season your own. I frequently use less than the 2/3 cup.)
1. Cut chicken into strips. 2. Place chicken in a bowl and cover with honey mustard. (I do this the night before and let the coated chicken sit coated in the fridge overnight.) 3. Dredge chicken in bread crumbs and shake excess off. 4. Place on baking sheet sprayed with nonstick spray. 5. Bake for 25-30 minutes at 350 degrees.
