Family and Friends Cookbook by Joanna Lund

I made this last night minus the Spinach sandwiches because I had everything but the dried mixed vegs


Grande Tomato Soup

1 can healthy request Tomato Soup
1 can diced tomatoes, undrained
1 tsp chili seasoning
1/2 cup fat free half & half
1/4 cup no-fat sour cream
1/4 cup real bacon bits

In med pan combine soup, undrained tomatoes and chili seasoning. Stir in half and half. Cook over med heat for 5 mins or until heated through, stirring often. When serving top each bowl with 1 tbsp sour cream and 1 tbsp bacon bits.


Spinach Sandwiches

1/3 cup fat free mayo
1/4 cup nofat sour cream
2 tbsp dried mixed vegs
2 tbsp chopped pecans
3 cups finely shredded fresh spinach leaves, stems removed and discarded
8 slices red cal bread

In med bowl combine mayo, sour cream, dried mixed vegs and pecans. Add spinach. Mix well. Spread about 1/2 cup between 2 slices bread


Sliced Strawberries in Custard Sauce

3 cups sliced fresh strawberries
1 pkg Jello Sugar free instant vanilla
2/3 cup dry milk powder
1 3/4 cup water
1/2 tsp vanilla extract

Spoon about 3/4 cup strawberries into 4 dessert dishes. In a med bowl combine dry pudding, dry milk and water. Mix well using a wire whisk. Blend in Vanilla extract. Spoon a full 1/2 cup custard sauce over strawberries. Refrig for at least 15 minutes.

Fiesta Champagne

1 cup cold Diet Rite White Grape Soda
1 cup cold white grape juice
2 cups cold diet gingerale

In large pitcher combine grape soda and grape juice. Stir in diet gingerale. Refrig at least 15 mins.

We love the soup, drink and strawberries. We haven't tried the sandwiches yet.
