Tomato Pot Pie

Serves 6

1 cup finely chopped celery
1/2 cup finely chopped onion
1 can Healthy request tomato soup
3 cups (28oz) tomatoes, coarsley chopped, drained, amd 1/3 cup juice reserved
1 tsp dried parsley flakes
1 1/2 cup (6oz) shredded red fat cheddar cheese
1 (7.5oz) pkg refrigerated buttermilk biscuits

Preheat oven to 375. Spray an 8x8 baking dish with cooking spray. In large skillet saute celery and onion for 10 mins or til tender. Stir in tomato soup, tomato juice, parsley and 1 cup cheese. Cook for 5 mins or until cheese melts stirring often. Add tomatoes. Mix well spread into pan. Separate biscuits and cut each into 4 pieces. Sprinkle pieces over tomato mixture. Lightly spray with butter flavored cooking spray. Sprinkle reamining chees on top and bake 12-15 mins or until golden brown. Let cool and divide into 6 servings
