Easy Santa Fe Chicken Crockpot

1 15 oz can black beans rinsed and drained
2 15.25 oz cans whole kernal corn drained
1 cup bottled thick and chunky salsa
5 or 6 skinless boneless chicken breast
1 8 oz cream cheese
1 cup shredded cheddar cheese

In crockpot, mix together beans, corn, and 1/2 cup salsa. Top with the chicken
breast, then pour the remaining salsa over the chicken.
Cover and cook on high 2 1/2 to 3 hours, or until chicken is tender.
Remove the chicken and cut into bite size pieces. Put back into the crockpot.
Add the cream cheese (cut into cubes to melt faster), and turn to high. Heat until
cream cheese melts, and blends into sauce.
Serve over rice. Top with shredded cheese.

Crockpot meatloaf

2 eggs
3/4 cup milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage (I didn't use this b/c I didn't have any)
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce
In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist). Shape into a round loaf; place in a 5 qt. slow cooker. Cover and cook on low for 5-6 hours
In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meatloaf. Cook 15 minutes longer or until heated through. Let stand 10-15 minutes before cutting.

Chuckwagon Stew
INGREDIENTS:
1 1/2 pounds cubed beef stew meat
1/2 pound smoked sausage of your choice, sliced
1 medium onion, chopped
3 potatoes, scrubbed and cubed
1 (28 ounce) can barbeque baked beans
DIRECTIONS:
Place the beef stew meat, sausage, onion, and potatoes into a slow cooker, and
stir to distribute evenly. Spoon the baked beans evenly over the mixture. Cover,
and cook on Low for 8 to 10 hours, or cook on High for 4 to 5 hours.
Note: this is a really good recipe but I do prefer Bushs brown sugar baked beans to the taste of bbq beans.

Gold Cake (The Basic Crockpot Cake)

2 cups flour
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1 cup butter
1 cup sugar
1 teaspoon nutmeg
6 eggs
Mace can be substituted for the nutmeg.

Set crockpot at High 20 minutes before beginning
Fit in liner.

Butter and flour 8-cup-capacity baking tin
Mix flour, cream of tartar, and salt; set aside
Cream butter, then add sugar, vanilla, and mace. Beat until fluffy.

Add eggs, one at a time, beating 1 minute after each
Blend in flour mixture; do not overmix.

Spread in tin, and put on lid or lay terry towel over it
Put in crockpot, cover and bake 3 hours or until cake has begun to pull from sides.
Uncover. Let stand in tin on cake rack about 10 minutes, then turn out to cool.
Dust with confectioners' sugar, slice and serve.
Two secrets for cake-baking in crockpot: use less than 1 c sugar for every 2 c flour. And use a liner


Decadent Chocolate Delight

Pam the bottom of the crock pot.
Mix:
1 (18.25 oz) box of chocolate cake mix
1 pint sour cream
1 (5 oz) pkg. instant chocolate pudding mix
1 (6 oz) bag of chocolate chips
3/4 cup vegetable oil
4 eggs
1 cup water

Pour into greased crock pot.

Cover and cook on low for 6-8 hours. (I did it on high for 3 hours and it seemed to work fine)

Beef Stew
2 lbs. stew meat (trimmed and cut into bite size cubes)
3 pkgs. beef stew mix
4 cups beef broth (homemade or canned is fine as well)
6 medium size potatoes (peeled and cubed)
4 large carrots (peeled and sliced)
3 tablespoons of oil

Directions
In a small bowl combine 4 cups of beef broth and 2 packages of beef stew seasoning. Stir until seasoning is disolved. Set aside.
While you are preparing your potatoes, carrots and meat preheat your crockpot on high.
Also, preheat a large skillet with the oil on the stove.
In a large bowl coat your meat with one package of your favorite beef stew seasoning. Stir around until all beef is well coated with seasoning. Once meat is well coated add to skillet and cook until meat is brown on all sides.
In preheated crockpot add potatoes, carrots and then the meat. Then pour beef broth mixture over top of potatoes, carrots and beef.
Put your lid on your crockpot and cook on low for 8-10 hours or on high for 4-6 hours. If you want to cook on low make sure you remember to turn the crockpot down to low from the preheating step.
About an hour before the stew is done if it appears to be to thick you can add more beef broth or water to thin it out. We love ours thick and chunky.
