Barbecue Beef Sandwiches

3 pounds rump roast, trimmed
3 tablespoons all-purpose flour
1 15 ounce can tomato sauce
1/2 cup chopped onions
1/3 cup packed brown sugar
2 tablespoons lemon juice
1 tablespoon beef bouillon granules
1 1/2 teaspoons chili powder
1 garlic clove -- finely chopped
1 teaspoon dry mustard
12 hamburger buns

Rub flour into roast. Place in bottom of crockpot and add remaining ingredients, except buns. Cook on LOW for about 14-16 hours. Serve over buns.

2 large Onions -- sliced
1 4 pound pork roast
6 Whole Cloves
2 cups water
1 16 oz bottle Barbecue Sauce -- your favorite
1 large Onion -- chopped

Place half of the sliced onions on the bottom of a crockpot; place meat on top along with cloves and the rest of the sliced onions. Add water, cover, and cook 8 to 12 hours or overnight, on low. Remove meat. Drain liquid from crockpot and discard. Remove bone and fat from meat; shred meat; return to crockpot. Add chopped onion and barbecue sauce. Cover and cook another 1 to 3 hours on high or 4 to 8 hours on low, stirring 3 or 4 times. Serve from crockpot on large toasted buns.

Chicken in Garlic and Butter Sauce

1 head Garlic Cloves -- peeled
1/2 cup Nonfat Margarine
1/4 cup dry white wine
1/4 cup Fresh Parsley -- minced (optional)

Wash and pat the chicken dry. Season liberally inside and out with the salt and pepper and add a few garlic cloves to the cavity. Brown the chicken on all sides if desired, and place in the crockpot with the remaining garlic, butter, and wine. Cover and cook on high for 4-6 hours. Add the fresh parsley before serving. Carve and serve with the sauce.

Easy Lemon Pepper Chicken

Place chicken in the slow cooker. Squeeze lemon juice over the chicken. Sprinkle with pepper. Cover and cook on low for 6 to 8 hours. Add more lemon juice if needed.

Glazed Mustard-Molasses Chicken

3 tablespoons Dijon mustard
1 tablespoon Apple Cider Vinegar
1/4 teaspoon Tabasco Sauce -- or other hot sauce
1 4 Lb Roasting Chicken -- cut into pieces or 3 1/2 lb chicken pieces, rinsed and dried
salt
Freshly Ground Black Pepper

Set a rack at the highest oven position. Heat the oven to 400 F. In a small, shallow bowl, whisk together the molasses, mustard, vinegar, and Tabasco. Dredge the chicken pieces in the glaze, coating them completely. Put the pieces, skin side down, in a rimmed, shallow 10 x 15 inch sheet pan. Pour any leftover glaze over the chicken; sprinkle liberally with salt and pepper. Roast on the top rack until the juices run barely clear when you prick the chicken, about 40 minutes. Remove the pan from the oven and set the broiler on high. Turn the chicken over and baste it with the pan drippings. If a lot of fat has rendered out, spoon some off before broiling to prevent vent flare-ups. Broil, basting the chicken and rotating the pan for even browning, until the chicken pieces are shiny and well browned, about 8 minutes. Drizzle the chicken with the pan drippings before serving.

4 cups V-8® Vegetable Juice
1 large onion -- chopped

1 pound Italian sausage
Salt -- to taste

Brown rice in olive oil. Put V8 juice in crockpot. Add onion, pepper and garlic to pot.

Brown rice in olive oil. Put V8 juice in crockpot. Add onion, pepper and garlic to pot. Carefully add browned rice to pot. (It will sizzle.)

Take sausage from casings. Brown sausage and add to pot. Add salt.

Cook on high for two hours, then cook on low for five hours.

It is a great recipe for a busy day. Sometimes I add some cooked shrimp 15 or 20 minutes before I serve it.

Slow Cooker Caramel Rice Pudding

3 cups cooked white rice
1/2 cup raisins
2 tsp. vanilla extract
1 can sweetened condensed milk -- (14 ounces)
1 can evaporated milk -- (12 ounces)
1 tbsp. sugar
1 tsp. Ground Cinnamon

Prepare the inside of 2- to 3 1/2-quart slow cooker with cooking spray. Mix all ingredients except sugar and cinnamon in the cooker. Cover and cook on low-heat setting 3 to 4 hours, or until liquid is absorbed. Stir pudding before serving. Sprinkle pudding with sugar and cinnamon. Serve warm.

Taste Of Fall Crockpot Pork Roast

3 pounds pork roast
1/2 cup orange juice
1 large onion -- sliced
6 cloves garlic -- halved
1 Granny Smith Apple -- --cut into thin wedges
1 cup Apple Cider
2 tablespoons Orange Marmalade -- optional

TWO DAYS BEFORE: Trim visible fat from roast. Make slits in the roast and insert garlic pieces. Place pork roast in a large plastic zippered bag. Pour orange juice over and place onions around meat. Seal bag, removing as much air as possible. Place in refrigerator.
TO COOK: Remove roast from bag, drain and reserve onions, discard marinade juices. Place roast in crockpot. Put reserved onions and apple wedges on top and around roast. Pour apple cider over and top with orange marmalade. Cover and cook on low for 8 to 9 hours. Remove meat and slice. Discard cooking juices, onions and apple.

Busy Day Beef Stew

6 large potatoes -- cubed
6 large carrots -- pared and cut in 2" pieces
3 pounds stew meat -- 1 1/2 cubes
1/3 cup soy sauce
2 beef bouillon cubes -- crushed
1 teaspoon paprika
1/3 teaspoon pepper
3 tablespoons all-purpose flour
1 12 ounce package frozen chopped onions
1 cup beef broth
1 8 ounce can tomato sauce

Layer potatoes, then carrots on bottom of liner. Top with meat;
sprinkle meat with soy sauce, crushed bouillon cubes, pepper and flour.
Spread with chopped onions. Combine beef broth and tomato sauce and
pour over all.
Place liner in base. Cover and cook on LO for 9-11 hours or HI for 5
hours.

Crockpot Lima Bean Casserole

1 pound dry lima beans
3 teaspoons salt
1 tablespoon molasses
1/2 cup butter
3/4 cup brown sugar
1 tablespoon dry Mustard
1/2 cup sour cream
or 1/2 cup milk
plus 1 tablespoon vinegar/lemon juice

Soak lima beans overnight. Sometime in the morning, boil the soaked
beans until completely softened. Drain.

In a crockpot, mix beans and butter.

Mix sugar, salt and mustard. Sprinkle on beans.

Mix molasses and sour cream together. Pour over beans and mix all
together.

Cover and cook in crockpot on low four to six hours (or until you're
ready
to eat). Smile

Crockpot Red Beans

drain

16 ounces stewed tomatoes

1 teaspoon thyme
1 onion -- chopped
2 garlic cloves OR
1/4 teaspoon garlic powder
salt and white pepper -- to taste

Put everything in the crockpot at the same time, except for the rice.
Turn on HI for 4 hours, then on LO for 6 hours. During the last 1 1/2
hour, put in the rice.

I made the busy day beef stew recipe yesterday. The gravy was really good, nice, rich brown color and flavor. It only took about 7 hours, though, to cook.
