Enchilada Casserole
· 1 (14 1/2 oz.) can tomatoes
· 1 small chopped onion
· 1 clove minced garlic
· 1/2 tsp. ground red pepper
· 1/2 tsp. salt
· 1 can tomato paste (6 oz)
· 1 lb. ground beef, browned
· 1 pkg. dry taco seasoning mix
· 2 cups shredded Cheddar cheese
· 9 corn tortillas
Sauce: Blend tomatoes with onion and garlic in blender. Pour in medium saucepan. Add pepper, salt and tomato paste. Heat until boiling, then simmer 5 to 10 minutes. Place 3 tortillas in bottom of crockpot. Layer on tortillas 1/3 of ground beef, 1/3 tomato sauce and 1/3 Cheddar cheese, then 3 more tortillas. Repeat each layer 2 more times, ending with cheese. Cover and cook on low 6 to 8 hours.

Ground Beef and Rice Curry
· 1 pound ground beef
· 1 large onion, chopped
· 1 cup converted rice
· 1 28 oz can tomatoes, cut up
· 1 1/2 cups water
· 2 apples, peeled, cored and chopped
· 1 tablespoon curry powder
· 1 clove garlic, smashed and minced
· 1/2 teaspoon salt
· 1/4 teaspoon pepper
In a large skillet, brown the beef with the onion. Drain excess fat. Put the ground beef and onions in a 3 1/2 quart crock pot and add the remaining ingredients. Mix well. Cover and cook on low 4 hours

Lasagna
· 1 lb. ground beef
· 1 onion, chopped
· 1/8 tsp. garlic powder
· 2-15 oz. cans tomato sauce
· 1-6 oz. can tomato paste
· 1-1/2 tsp. salt
· 1 tsp. dried oregano
· 1-12 oz. carton cottage cheese
· 1/2 cup grated Parmesan cheese
· 12 oz. lasagna noodles, uncooked
· 12 oz. shredded mozzarella cheese
Brown ground beef and onion in skillet. Add garlic powder, tomato sauce, tomato paste, salt and oregano. Cook long enough to get it warm. Spoon a layer of meat sauce onto the bottom of the crockpot. Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
Repeat with sauce, noodles and cheeses until all are used up. Cover and cook on low for 6-8 hours.


Porcupine Meatballs in the Crockpot
· 1 1/2 lbs. lean ground beef
· 1/2 c. raw rice
· 1/2 c. onion, finely chopped
· 1/2 c. green pepper, finely chopped
· 1 egg
· 1 tsp. salt
· 1/4 tsp. pepper
· 1 (10 1/2 oz.) can tomato soup
· 1 can diced tomatoes and liquid
In mixing bowl combine ground beef, rice, onion, green pepper, egg, salt and pepper. Mix well to blend. Shape meat mixture into 24 meatballs, about 1 ½ inches in diameter. Place meatballs in slow cooking pot. Pour soup and diced tomatoes over meatballs. Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours. Makes 4 to 6 servings

Sloppy Joes
· 3 lb Ground beef
· 1 c Onion, chopped
· 2 cl Garlic, minced
· 1 1/2 c Ketchup
· 1 c Green pepper,chopped
· 1/2 c Water
· 4 tb Brown sugar
· 4 tb Prepared mustard
· 4 tb Vinegar
· 3 ts Chili pepper
· Hamburger buns
In a large skillet, brown ground beef, onion, and garlic. Cook until meat is brown and onion is tender. Drain off fat. Combine remaining ingredients (except buns) in crockpot. Stir in meat mixture. Cover and cook on low 6-8 hrs. or on high for 3-4 hrs. Spoon onto hamburger buns. Serves 8 to 10.

Spaghetti Sauce
· 1 lb. lean ground beef
· 1 large onion, chopped
· 1 clove garlic, minced
· 2 1-lb. cans tomatoes, cut up
· 1 8-oz can tomato sauce
· 1 12-oz can tomato paste
· 1 c. beef bouillon
· 2 T. minced parsley
· 1 T. brown sugar
· 1 t. dried oregano leaves
· 1 t. dried basil leaves
· 1 t. salt
· 1/4 t. pepper
In skillet , brown ground beef with onion and garlic. Drain. In crockpot, combine browned meat, onions, and garlic with remaining ingredients. Cover and cook on low for 6 to 8 hours. Serve over hot spaghetti. May be made ahead of time and frozen. Makes 6-8 servings.


Stuffed Green Peppers
· 5-6 green bell peppers
· 1/2 pound lean ground beef
· 1/4 cup finely chopped onion
· 1 tablespoon chopped pimiento (I use roasted red pepper)
· 1 teaspoon salt
· 1 12-ounce can whole kernel corn drained well
· 1 tablespoon Worcestershire sauce
· 1 teaspoon prepared mustard
· 1 10-3/4-ounce can condensed cream of tomato soup
Cut a slice off top of each pepper. Remove core, seeds and white membrane. In a small bowl, combine beef, onion, pimiento, salt and corn. Spoon into peppers. Stand peppers up in slow-cooking pot, in two layers if necessary. Add Worcestershire sauce and mustard to soup; pour over peppers. Cover and cook on low for 8-10 hours. Serves 4 to 6.

Stuffed Shells
· 18 jumbo pasta shells
· 1 lb. lean ground beef
· 1 onion, chopped
· 1 clove garlic, minced
· 2 c. shredded Mozzarella cheese
· 1/2 c. seasoned bread crumbs
· 1 tbsp. parsley flakes
· 1 egg, beaten
· 2 jars (15 1/2 oz.) meatless spaghetti sauce
· 1/2 c. grated Parmesan cheese
Preparation : Cook pasta shells according to directions, just until tender and drain. Meanwhile, brown beef, onion and garlic in corningware in skillet; drain. Add cheese, bread crumbs, parsley and egg. Stuff shells, set aside. Pour 1 jar of sauce into crock pot. Arrange stuffed shells in sauce.
Top with other jar of sauce and Parmesan cheese. Cover and cook on low 5 to 7 hours.

Sweet and Sour Meatballs
Meatballs:
· 1 pound hamburger (chuck or better is best)
· 1/2 tsp. salt
· 1/4 tsp. pepper
· 1/2 c. chopped onion
· 1 egg
· 1 c. oatmeal
Mix and make into balls. DO NOT BROWN!
Sauce:
· 1/2 c. brown sugar
· 1/4 c. lemon juice
· 1 can tomato soup
Mix and pour over meatballs; cook 2-3 hours on high (if making double recipe use larger crockpot and increase time to 7-8 hrs.)


Tijuana Train Wreck
Ingredients-
Sauce:
· 2 lbs ground beef (or turkey)
· 2 tbsp chili powder
· 4 tbsp sugar
· 1 large onion
· half can of tomato sauce
· 3 small cans tomato paste
· 3-4 cans water (tomato paste size)
· oregano, cumin, salt to taste
Toppings:
· chopped tomatoes
· lettuce
· green peppers
· grated cheddar cheese;
· sour cream
· Doritos Chips
Preparation: Simply brown meat and drain. Place all SAUCE ingredients in crockpot including browned meat and cook on high for 3-4 hours or low for 8+ hours stirring on occasion. Serve on top of Doritos or tortillas with toppings.

Traditional Bolognese Sauce
· 1 pound Lean ground beef
· 1/2 pound Italian sausage, no casing
· 1 Onion, chopped
· 1 Glove garlic, crushed
· 1 small Carrot, grated
· 2 Stalks celery, chopped
· 1 can (28 oz) diced, peeled tomato
· 2 cans (6 oz) tomato paste
· 1 teaspoon Sugar
· 1 tablespoon Chopped fresh oregano
· 1 tablespoon Chopped fresh basil
· 1 teaspoon Salt
· 1/4 teaspoon Pepper
· 1/2 cup Dry red wine
· Cooked pasta
· Parmesan cheese (optional)
Brown ground beef and sausage, drain. Place in Crock pot, turn pot on LOW. Add remaining ingredients, except pasta and cheese. Cover and cook on LOW 8 to 9 hours. Make about 8 cups. Spoon over your favorite pasta. Sprinkle with grated Parmesan cheese, if desired


Zesty Meatball Sandwiches
· 1 egg
· 1/2 teaspoon salt
· 1/2 teaspoon Italian seasoning
· 1/4 teaspoon crushed red pepper flakes
· 2 cloves garlic, minced or 1/4 teaspoon
· garlic powder
· 1/4 cup chopped onion
· 1 pound ground beef
· 1 pound ground turkey
· 1/2 cups bread crumbs
· 1/3 cup grated Parmesan cheese
· 1 can (16 ounces) tomato sauce
· 2 tablespoons red wine vinegar
· 6-8 hoagie-type sandwich rolls, split and warmed
Condiments if desired; shredded mozzarella cheese, red and yellow pepper strips, sliced onion and olives.
In large bowl, beat egg with salt, Italian seasoning, red pepper flakes and garlic. Add chopped onion, beef, turkey, bread crumbs and Parmesan cheese; mix well. Shape mixture into 1-inch balls and brown in a large skillet. Drain meatballs and transfer to a 5-quart crockpot. In the same bowl, mix tomato sauce and wine; pour over meatballs. Cover and cook on low for 5 1/2
to 6 hours. To serve, place 33-4 meatballs in each split roll; top with sauce from Crockpot. If desired add condiments and serve.

Crock Pot Oatmeal - This is AMAZING! And so cheap!!
· 1 c. oatmeal
· 1/3 c. raisins (opt.)
· 2 1/4 c. water
(Other options, apples, cinnamon, nuts.) Spray crock pot with non- stick spray. Cook on low for 8 to 10 hours. When the raisins cook with the oatmeal it sweetens it, so adjust the amount of sugar or sweetener. Great for families on the run in the mornings. Last 1 out, remember to turn off the crock pot.

Macaroni And Cheese In Crock Pot
· 1 (16 oz.) pkg. macaroni, cooked & drained
· 1 tbsp. salad oil
· 1 (13 oz.) can evaporated milk
· 1 1/2 c. milk
· 1 tsp. salt
· 3 c. shredded sharp cheddar cheese
· 1/2 c. melted butter
Lightly grease crock pot. Toss macaroni and oil. Add all remaining ingredients. Stir, cover and cook on low 3 to 4 hours, stirring occasionally

Foolproof Rice
· 1 cup raw rice, converted
· 1 cup water
· 2 teaspoons salt
· 1 tablespoon butter
Combine all ingredients in the crock pot. Cover and cook on LOW for 6 to 8 hours.

Mexican Cheese Dip
· 1/2 pound Velveeta
· 1 teaspoon Taco seasoning (optional)
· 1/2 can Ro-Tel Tomatoes with chilies
Cube cheese and place in crock pot. Cover and heat 30 to 60 minutes, until melted, stirring occasionally. Stir in tomatoes and seasoning. Cover and continue heating 30 minutes. Serve with tortilla chips or corn chips.

Chris' Crock Pot Dressing
· 8-inch pan cornbread
· 8 slices day old bread, toasted and cubed
· 4 eggs
· 1 med. onion
· 1/2 c. chopped celery
· 1-2 tsp. sage or poultry seasoning
· 1/2 tsp. black pepper
· 2 cans cream of chicken soup
· 2 tbsp. butter or margarine
Lightly grease crock pot. Crumble cornbread into mixer bowl. Add all ingredients except butter. Pour mixture into crock pot. Dot top with butter. Cook on high 2 hours or on low 3-4 hours

Apple-icious Pork Tenderloins
· 2 pork tenderloins (1 1/2 to 2 lbs total)
· 1 large onion, halved and cut in 1/4-inch slices
· 2 apples, peeled and coarsely chopped
· 2 tablespoons apple jelly
· 1 tablespoon cider vinegar
· salt and coarsely ground black pepper to taste
Combine all ingredients in the crockpot (brown pork if desired); cover and cook on low for 7 to 9 hours. Serve with rice. Serves 4 to 6.

Chalupas
· 3 pounds pork loin roast
· 1 pound dry pinto beans, soaked overnight
· 2 garlic cloves, minced
· 2 tablespoon chili powder
· 1 tablespoon ground cumin
· 1 teaspoon oregano
· 1 can green chilies, chopped
· 2 teaspoons salt, or to taste
Topping:
· Grated cheese
· Chopped onions
· Tomatoes
· Lettuce
· Sour cream
· Crushed corn chips
Place first 8 ingredients in crockpot. Cover with water. Cook 7-10 hours. Remove bones and mix well. Top with desired toppings.

Corn, Ham and Potato Scallop
· 6 cups peeled baking potatoes, cut in 1" cubes
· 1 1/2 cups cubed cooked ham
· 1 15.25 oz. ca Green Giant Whole Kernel Sweet Corn , drained
· 1/4 cup chopped green bell pepper
· 2 teaspoons instant minced onion
· 1 10 3/4 oz. c condensed Cheddar Cheese Soup
· 1/2 cup milk
· 2 tablespoons all-purpose flour
1. In 3 1/2 to 4-quart Crock-Pot slow cooker, combine potatoes, ham, corn, bell pepper and onion; mix well.
2. In small bowl, combine soup, milk and flour; beat with wire whisk until smooth. Pour soup mixture over potato mixture; stir gently to mix.
3. Cover; cook on low setting for 7-9 hours or until potatoes are tender

Creamy Shells with Ham & Smoked Cheese
· 12 ounces diced ham
· 1 can cream of celery soup
· 8 ounces smoked Gouda cheese
· black pepper to taste
· 1 cup frozen vegetables, cut broccoli or mixed
· 3 cups cooked small pasta shells or macaroni
· 1/4 cup of evaporated milk, low fat
In a crockpot, 3 1/2-quart to 5-quart, combine ham, soup, cheese, and pepper. Cover and cook on low for 4 to 5 hours. Add frozen vegetables 30 minutes before serving. Add milk to thin; add pasta then serve. Serves 4.

Crock Pot Pork Chops
· 5-6 pork chops
· 1/4 c. brown sugar
· 1/4 tsp. ground cinnamon
· 1/4 tsp. ground cloves
· 8 oz. can tomato sauce
· 29 oz. can cling peaches (halves)
· 1/4 c. vinegar
· Salt and pepper
Brown chops lightly on both sides in skillet. Pour off excess fat. Combine sugar, cinnamon, cloves, tomato sauce, 1/4 cup syrup from peaches and vinegar. Season chops and arrange in slow cooker. Put drained peach halves on top. Pour tomato mixture over all. Cover and cook on low for 4-6 hours

Liesl's Crock Pot Pork Chops
· Pork Chops
· Cream of whatever soup
· 1/2 c ketchup
Layer pork chops in crock. mix soup and ketchup together. Cook on low all day [approx. 8 hrs]. Good stuff, my kids love it....and they hate everything


Down South Pork Barbecue - Start this the night before!
· 5 pounds Pork roast
· 2 large Onions, sliced
· 6 Cloves
· 2 cups Water
· 1 16 oz bottle Bbq sauce, your choice
· 1 large Onion, chopped
Place half the sliced onion in the bottom of a crockpot. Add meat,cloves and water. Add the remaining sliced onion. Cover and cook overnight or 8 to 12 hours on LOW. Remove bone and fat from meat. Discard onions, cloves and water. Shred the meat and put it back in the pot. Add chopped onion and the BBQ sauce. Cook another 1 to 3 hours on HIGH or 4 to 8 hours on LOW, stirring several times. Serve on large buns. If your sauce has a lot of sugar in it, stir more
frequently to prevent burning

Ham & Noodle Casserole
· 1 cup Uncooked noodles
· Vegetable oil (Canola)
· 1 cup Cubed ham
· 1 can Condensed cream of Chicken
· 1 can Whole kernel corn -- drained (8 oz.)
· 1 tbsp Pimento -- chopped
· 1/2 cup Cheddar cheese -- shredded
· 1/4 cup Green pepper -- chopped
Cook noodles according to package directions until barely tender (I do approximately. 5 to 6 minutes). Drain and toss with just enough oil to coat. ( 3 tsp ) Add noodles and remaining ingredients to a greased Crock pot and stir to mix. Cover and cook on LOW setting 7 to 9 hours. (I had mine ready in 6 Hours).Makes 2 servings or 1 1/2 to 2 quarts.

Ham Tetrazzini
· 1 can condensed cream of mushroom soup, (10 3/4 oz)
· 1/2 cup evaporated milk, or scalded milk
· 1 1/2 teaspoons prepared horseradish
· 1/2 cup grated Parmesan or Romano cheese
· 1 1/2 cups cubed cooked ham
· 1/2 cup stuffed olives, sliced (optional)
· 1 can (4oz) sliced mushrooms, drained
· 1/4 cup dry sherry or white wine
· 1 package spaghetti, (5 oz)
· 2 tablespoons butter, melted
Combine all ingredients except spaghetti and butter in Crock-Pot; stir well. Cover and cook on low for 6 to 8 hours. Just before serving, cook spaghetti according to package directions; drain and toss with butter. Stir into Crock-Pot. Sprinkle additional grated cheese over the top. Serves 4. May be doubled for a 5-quart pot.
